Ingredients:

4 ptarmigan breasts, cut into 1 in. pieces
2 c. teriyaki sauce
1 red onion, cut into 1 in. pieces
1 lb bacon, cut strips in half
2 fresh jalapenos, cut into 1 in. slices
Pineapple chunks, cut into 1 in. pieces
Salt and pepper to taste 

Directions:

To prepare the kabobs:  

  1. Marinade the ptarmigan in teriyaki sauce in the refrigerator at least 1 hour or up to 8 hours. 
  2. Thread the ptarmigan, bacon, red onion, jalapenos, and pineapple onto the skewers. 
  3. Salt and pepper the skewers to taste. 

To cook:  

  1. Preheat grill to 325°F.
  2. Cook for 5-7 minutes on each side or until bacon is crispy on the outside.
